Cedar, sage lime, with mineral notes. Moderate length, dry on the finish. Pair with smoked fish and goats cheese salad or light cheeses and charcuterie. Stonechat is made by pressing the Sauvignon Blanc grapes lightly followed by cool fermentation in order to capture the early ripening aromatics of the grape. The grapes were hand picked, milled, destemmed, and pressed. Then, fifty percent of the wine was barrel fermented and malolactic fermentation undertaken, bentonite fining, and cold stabilised. Stonechat was bottled within 6 months of grape harvest.
